Description

Perennial with large, deeply lobed and silvery-gray leaves, mild, artichoke-like flavor. DTH – 120-150 days from transplant. Prefers well-draining soil and full sunlight. (Zone: 7-10). Cardoon is a distinct vegetable related to artichokes, known for its tall, leafy stalks and edible midribs. The stalks of cardoon have a mild, artichoke-like flavor and are typically blanched before use to remove bitterness. Cardoon is a popular ingredient in Mediterranean cuisine, particularly in dishes like cardoon gratin, where the blanched stalks are baked with a creamy sauce, breadcrumbs, and cheese. It’s also used in soups, stews, and braised dishes.
