The chiltepin Pepper, chiltepe, also known as chile del monte or aji pajarito, is a Capsicum annum species that is used all over North and South America.
It is extensively used to produce sauces or as a condiment in Guatemala and Mexico, specifically in the states of Baja California Sur, Sonora, Chihuahua, Nuevo León, Coahuila, Veracruz, and Puebla. In Mexico, it is eaten in soups of all kinds as well as dishes like menudo, pozole, or tapixte in Veracruz. Its application gives foods a very fiery touch without taking away from their unique flavor.
